A great chef devotes part of his life to study and preparation. This is definitely the case with Javier Medina Chico, Head Chef at El Cigarral de las Mercedes. His high level of professionalism and experience has been demonstrated both in our country, in restaurants such as Jose Luis Café de Oriente in Madrid, and outside our borders, in the Spanish Embassy In Vienna, Le Chapon Fin  (**Michelin) Bordeaux and the Berkeley Hotel Restaurant, London (5*)

He has received numerous awards, including twice declared the best chef in the Province of Toledo, and second place in the regional Castilla La Mancha Contest in 2000 and 2003.

The large kitchen team that he directs is made up of excellent chefs and sous-chefs; a workforce of more than 20 people dedicated specifically to the preparation of dishes designed by Javier Medina. Continual gastronomic innovation and the search for more intense flavours are the hallmark of our cuisine.

The Restaurant is of particular note for the quality and innovation of its dishes as well as for its outstanding service. Here, gourmets and dining connoisseurs are in their element. From the choice of ingredients to the preparation of its acclaimed dishes, everything flows from the house’s demanding standards for good work.

“Pork Loin in Aromatic Garlic Crust”, “Steamed Sea Bass in Mild Manchego Cheese Sauce” or the “Marzipan Delight with Thyme and Almond Foam” are some of the delicacies on offer.
