Following a great culinary tradition of the Basque Country, Victor Arguinzoniz, head chef and proprietor of Etxebarri, is renowned for his exceptional quality and freshness of ingredients which are further enhanced through cooking over an open fire.
Set against the backdrop of the Basque mountains amidst the rural Biscayan countryside, Etxebarri enjoys an enviable reputation which spans across the Basque Country and beyond. In the June 2008 issue of Food and Wine magazine, Etxebarri was referred to as “Spain’s new zeitgeist restaurant, reflecting the country’s recent paradigm shift from sci-fi gastronomy to cocina de producto, or ingredient-driven cuisine. What one eats here is puro producto (“pristine ingredients”), transformed by the grill into uncanny versions of themselves.” With the increased attention to Basque chefs and restaurants, Etxebarri manages to stay amongst the best and is well worth the time and effort for a visit.
Originally constructed in the 18th century, Etxebarri has always been the focal point for the village, where the locals could come and meet over a drink or something to eat. Its clean, minimalist style reflects the simple quality of the food, whilst maintaining respect for the traditional style of the region.
To compliment the cuisine, Etxebarri offers a wide range of fine wines from its cellars. Victor is joined by his wife Patricia, who oversees the running of the front-of-house and ensures a warm welcome to the restaurant.
