Patrick Berton was appointed Executive Chef of the Relais Bernard Loiseau in 2003. Since taking the helm of the Relais’s kitchens (2 in Burgundy and 2 in Paris) Patrick has ensured that the menu has continued to evolve by developing new recipes in the spirit of Bernard Loiseau’s culinary values. Patrick’s menu is all about perfection, demand, authenticity and imagination- qualities he developed during the 20 years he spent working as Bernard Loisea’s protege.
Patrick’s menu focuses on respect for the integrity of the ingredients (heavy on seafood) used and the desire to make them truly exceptional. In order to create pure and powerful flavor, the use of added fat and sugar is limited. Patrick’s recipes display local and seasonal ingredients and he works closely with French producers in order to ensure that they continue to offer the finest ingredients.
The restaurant’s dining rooms have recently been redecorated to create a contemporary yet intimate environment, offering panoramic views of the beautifully landscaped grounds and gardens. Guests begin their dining experience by perusing the menu over drinks in one of the property’s charming fireside seating areas or outside on the garden terrace.
The wine cellars at the Relais Bernard Loiseauboast about having one of Burgundy’s most extensive wine cellars, with 20,000 vineyard bottled wines and 1,000 different varieties. Cellarmaster Eric Goettelmann has been with the Relais for 7 years. He was elected Meilleur sommelier de Bourgogne (Burgundy’s Best Cellarmaster) in 2004 and 2006.
