At the foot of the magnificent hill of Schlossberg, in a setting of vines and of roses, the Domaine Weinbach “stream of wine”, named after the small spring which goes through it, was built in 1612 by Capucin monks. The Clos des Capucins opens its gates for you year round to show you the wines in their birthplace, and explore the cellar where the Capucins used to hide their treasures. Our wine-making process carefully respects the grape’s qualities; a minimum of interference combined with an extreme vigilance allows their development. The main conditions are: grape picking scheduled on optimal maturity; rigorous selection; gentle and gradual pressings; a long fermentation in ancient oak barrels, under the action of the indigenous yeast for authenticity and complexity.

The mineral richness and variety of the soil, the personality of each grape variety, its balance with the surroundings and the soil, the individuality of each plot of vines and the choice and conditions of the wine harvest lead to a large selection of “cuvées”. Each one has its own personality, its own colour, but always with the same quest for purity and elegance combined with richness and harmony. The results of this quest are wonderful gastronomic wines.

A Domaine Rich in History : from Capuchins to “Capucines”
The Clos des Capucins, a historic soil, extends over 5 hectares, protected by the surrounding walls of the former Capuchin monastery. The latter is quoted as soon as 890, the year when the empress Richarde gave it to the Abbey of Etival, which left a part of the soil to the Capuchin monks. At the foot of the majestic Schlossberg hill, you’ll find the Domaine Weinbach surrounded by vines and roses. Named after the ” wine brook “, the little stream that meanders through the estate, Domaine Weinbach was established in 1612 by Capuchin monks.
