Under the leafy branches of a three hundred year old park, within a shrine of greenery and a stone’s throw from the Mediterranean, the Black Mountain and the Corbières, Le Domaine d’Auriac welcomes its guests in calm and comfort. You will enjoy Gourmet eating in Le Restaurant Bernard Rigaudis and le Bistrot d’Auriac. The 18 hole-golf course, the swimming pool, the tennis court and walks, which give an enchanted atmosphere to a relaxed stay beside the city of Carcassonne and the Canal du Midi, which are both classified as World Heritage Sites by Unesco.
Le Domaine d’Auriac welcomes you in a comfortable and quiet atmosphere. 24 elegant and flowery rooms, all equipped with television, minibar, safe and air conditioning. The « Boulanger’s House », « Meunier’s House » and « Ecuyer’s House », separated from the main building by the « Cherche Midi » and « Saint Jacques de Compostelle » streets open their windows on the terraces and Auriac golf course of Auriac.
The dining room with cloth in rare and precious fabric continues on terraces into the gardens, facing the golf course. In winter, the flames of the great fireplace accompany the dinners of the guests. On fine days, meals are served in the gardens.
The Chef, Philippe Ducos, offers a traditional, regional cuisine, with beautiful meat dishes, game in season, fish from local fishers and the dishes of our ancestors. As for the desserts, these are the work of Jérôme Lauvand, who will be able to seduce all your senses with seasonal fruit, home-made chocolates and a few subtle old recipes from our grandmothers. Bernard Rigaudis, the founder of the Domaine, had a passion for his land and its earth and always praised loud and long the great wines of Languedoc Roussillon. Today, time has proved him right; and we know how to help you discover these marvels.
After dinner, guests can appreciate the quiet atmosphere of our salons, just right for discovering our superb collection of after-dinner spirits, or enjoying a game of French billiards in the ancient cellars of the Carolingian Abbey.
