The grapevine could only have dreamt about growing in a mixed Mediterranean / Atlantic climate such as the one you find here in the Malepère, Languedoc. In St Martin de Villeréglan, situated on the southern slopes of the Malepère, wine growing forms the lion-share of agriculture. This godly drink has been religiously cultivated and made here since the beginning of time, notably at the Lafille vineyard where the skill of winemaking has been passed down generations.
Pierre Lafille and his daughter Delphine are maintaining the spirit that has been present since the first Lafille took over the vineyard from M. Bardou (who himself was from a long line of winemakers) in the 1870s: to conscientiously work on this noble product for the pleasure of connoisseurs. The winegrowers in the Malepère cultivate contrasting vines with skill and passion in order to produce flamboyant wines that are still harmonious and natural. The wines that Pierre Lafille makes reveal an excellent maturity of these influences. The Domaine produces red and white wines of high quality and have won several gold medals in different tastings.
Their appelation Côtes de la Malepère is a blend of Merlot and Cabernet Sauvignon grapes grown on the limestone hills and terraces surrounding sthe small village of St Martin. It is a powerful yet harmonious wine with a smell of ripe fruits. It is an excellent wine to drink with dishes such as the local speciality Cassolet.
Their Vin de Pays d’Oc is an oak matured Chardonnay. Selected after pressing, this Chardonnay is fermented and matured in oak barrels for 8 months. Upon tasting, its nose is woody with persistance in the mouth, with notes of vanilla.
The Vin de Pays d’Oc Merlot is supple and fresh, with smooth and long lasting tannins. Fruity and fleshy, it will satisfy the most refined palate. Perfect with red meats or with a a plate of cheese, it will seduce you up to the desert.
St-Martin de Villeréglan is a small village in the department of Aude in the South of France. It is on the southern slope of the Malepère, with a magnificent view of the Pyrénées and is surrounded by vineyards and oak forests. It is a landscape of valleys and mountains, forests and vineyards,and is dotted with reminders of the Middle Ages – fortified villages, abbeys, Romanesque churches and the ruined castles associated with the Crusades and Cathar martyrs of the 12th and 13th centuries.
The Northern limit of the Malepère reaches Carcassonne with its walled city (a World Heritage monument) and in the South it almost reaches Limoux. Limoux is famous for its Blanquette de Limoux, the sparkling wine that is also made in the Malepère, and for the Carnival that animates the town for three months in the winter.
