In March 2005, L’Assiette Champenoise received its second star in the Michelin guide rouge. Our chef, Arnaud Lallement creates a specially-made cuisine for your enjoyment. Our restaurant is graced with bay windows that provide a splendid view of the terrace and the park. In good weather, we are delighted to serve your aperitif on the terrace. Alongside the gastronomic menu is our wine cellar menu listing numerous wines to accompany your meal. Arnaud Lallement uses only the highest quality products and invites you to sample his progressive and passionately prepared cuisine.
In 1996, Chef Arnaud came back from completing his cuilinary studies at the Hospitality school in Strasbourg to work with his father, Jean-Pierre Lallement, at this lovely establishment. After his studies, he spent some time refining his skills in leading grandes maisons such as chez Roger Vergé, Michel Guérard and chez Chapel (Alain Chapel at Mionnay).
At only 24 years of age, he took on the direction of the kitchens at the Assiette Champenoise, a beautiful turn-of-the-century building surrounded by a lush park. Arnaud works with great passion from inside his kitchens and creates his delicacies with only the highest quality products. In 2001, Arnaud turned 26. At this time L’Assiette Champenoise received a Michelin star. Arnaud compiled his first cookbook “Carnet des saveurs en champagne”, in time for a launch during the 2003 holiday season. Arnaud was the youngest chef at 29 years old to be selected by Alain Ducasse for his Fou-Food France project, a project inviting young provincial chefs to come to Paris and present their fine cooking skills.
In 2007, the Lallement family will celebrate their 20th anniversary at L’Assiette Champenoise in Tinqueux. An adventure that began in 1975 in Châlons-sur-Vesle.
L’Assiette Champenoise also includes a four star hotel, which is run by Colette et Mélanie L’allement. They would be delighted to welcome you to their 55 room hotel. All rooms have been fully renovated and are decorated in a traditional style with great care taken to assure your comfort.All rooms come equipped with a bathroom and separate WC, mini bar, television and telephone. Breakfast is served continental style (cereals, cold cut meats, pastries, fresh fruit, …) or if you prefer you may take breakfast in your room.
The bar was recently redesigned with a more modern color palette. In the bar, we serve champagne by the glass: Krug Grande Cuvée, Brut and Rosé champagne.
