Nathalie and Gérald Garcia invite you to their table in a superb 11th century Cathar castle and offer you a chance to taste their special dishes, compositions with heady flavours, subtly seasoned with spices and condiments, and using fresh, seasonal products from the region. You may also stay in one of the seven bedrooms in the hotel upstairs, reached along narrow corridors in which the subdued lighting is reminiscent of the magical atmosphere of medieval châteaux.

Gérald Garcia’s creative, refined cuisine is rooted in an unashamed regional identity based on favourite products (foie gras, pigeon, calf sweetbreads, blood sausage, Lauragais lamb…) used with great style.
You may have your meal in the restaurant, situated in the château’s former ballroom – a wonderful combination of old-style charm and modern, clean lines, or on fine days on the large belvedere terrace, looking out on majestic countryside as far as the eye can see.

Upstairs, the hotel’s huge bedrooms open out on to relaxing country views. Tastefully renovated to meet the requirements of a refined clientele, these seven rooms are all different and bear the names of well-known people who have made their mark on the region.

You may opt for the cosy intimacy of the “little” room dedicated to Pierre-Paul Riquet, the architect of the Canal du Midi, which is decorated in restful shades of sand and brown. Or you may prefer the majestic atmosphere of the “Comtes de Toulouse” suite, named in tribute to the brave lords who stayed in this ancient building.
