If you choose to stay at our inn, La Posada, you will have a chance to discover the spirit of our winery and our people, and to experience the winemaking process from its beginning. You will be able to walk among the vineyards, to learn about the different varieties of grapes and to follow the process from the arrival of the grapes at the winery until the bottling of the wine. Two double bedrooms, each with an atmosphere of refined good taste and spectacular views of the sunrise and the sunset behind the endless silvery Andes Mountains. If you are traveling on business, we have an office where customers can be received and meetins held in absolute privacy and with great comfort, in a unique environment and with a warm group of people to personally assist your needs. If you are visiting us for pleasure, you will be able to walk among the vineyards, taste our wines in the company our our winery’s enologist or even take cooking classes with the famous chefs Federico Ziegler and Jean Paul Bondoux from our restaurant La Bourgogne.

THE WINERY
The winery was built in 2002 on a family farm in the heart of Vistalba (Lujan de Cuyo). That is where Carlos Pulenta developed his personal undertaking of blended wines involving members of his family, advisors, enologists and a highly esteemed group of people who knew his land well. The grape harvest is carried out manually, after one night, in which the temperature of the grapes is reduced 6 degrees centigrade, a double selection of stems and berries is done, these grapes, whole and selected, are gently placed in concrete fermentation tanks, where, after three to four days of cold maceration, fermentation begins.

The winery has been designed in such a way that the whole winemaking process is done by gravity, without the use of pumps. The concrete fermentation tanks work under a system of Carlos’ own desitn with cold and/or hot water pipelines within the walls. Two French wooden barrels are used for the best selected grapes destined to blend.

THE RESTAURANT
Surrounded by mountains and vineyards, La Bourgogne in Vistalba, while keeping its typical French characther, has a more regional style and the value of ptoducts such as olive oil, grapes and vines are emphasized. It maintains its usual refinement of decoration, service and quality. The menu is renewed every season, in order to include products at their best degree of quality. The chef, Federico Ziegler, with Jean Paul Bondoux and a team of trained cooks, propose a conception of evolutionary cuisine which aims at preserving the flavors of our region’s raw materials, among these, our meat for export and fresh fish stand out, depending on the market. The restaurant opened in 2005, and in that same year it obtained an award for best kitchen 2005 and for best winery restaurant among the eight wine capitals of the world.
